Chapter One
Cocoa - Brown Sugar - Hazelnut
Our foundational blend, this coffee represents a the magic that happens when two coffees, one from Brazil and one from Colombia, combine to yield delicious flavors.
The heart of this blend is a coffee from Fazenda Recreio, an award winning farm in the Vale De Gama region of Brazil. Adding vibrance to the cup is a seasonal coffee from Huila, Colombia. We develop this blend to be an exceptional espresso or a comforting cup of filter coffee, whichever you choose.
For Espresso:
We extract coffee in our cafes using a more traditional ratio of ground coffee to espresso weight in the cup. Our dose is usually between 17 and 18 grams, with a yield of 34 to 36 grams. We do this with a 30 to 35 second brew time, and we find this makes espresso that is delicious to drink as is, or pairs well with milk.
Coffee "C Market" Price - $2.15
Coffee is a globally traded commodity. As such, there is a market for trading coffee futures. This market price fluctuates based on many factors, but especially supply and demand. While, we do not buy many coffees based on the C Market, it does impact how coffee we purchase is priced. The price shown is reflective of the market at the time that we contracted this coffee.
Guilder's Price - $4.25
This is the final price we pay for this coffee. This includes any premiums we might pay to the producer to make sure they are receiving a sustainable margin. It also includes all of the logistics of moving the coffee from its place of origin to our roastery in the Alameda neighborhood of Portland, OR, USA.
