Eduardo & Jorge: A Collaborative Coffee Story
From the highlands of El Cumbre in Planadas, Tolima—an area rich with history and resilience—comes this exceptional yellow bourbon coffee. Grown at altitudes of 1,300 to 2,180 masl, the region boasts ideal agro-climatic conditions and a wide variety of coffee types. Edward, a dedicated farmer, partners with Jorge Rojas, an expert in processing, to create a coffee that exemplifies innovation and tradition.
Precision Processing for Unmatched Flavor
This lot is carefully processed at Jorge’s state-of-the-art facility, La Central, where innovation meets precision. The cherries undergo a unique fermentation process, beginning in sealed low-oxygen environments to enhance fruit-forward notes. High quality, Penagos brand, machinery ensures only the best cherries are selected before de-pulping and a second fermentation in sealed barrels. After a single wash, the beans are dried meticulously in a mechanical dryer over a week, allowing for stable humidity and extended freshness.

Coffee is a globally traded commodity. As such, there is a market for trading coffee futures. This market price fluctuates based on many factors, but especially supply and demand. While, we do not buy many coffees based on the C Market, it does impact how coffee we purchase is priced.
