We have partnered with Jorge Rojas and his family’s farm, El Jardín, for seven years, but this harvest marks our first time purchasing his Caturra Chiroso. Genetically traced back to Ethiopian landrace varieties rather than traditional Colombian lineages, this unique cultivar produces dense seeds with a distinctly floral, tea-like profile. Jorge highlights these delicate genetics through a meticulous fermentation process, carefully monitoring the environment in sealed barrels so temperatures never exceed 23°C. This slow, cool method, followed by a stabilized week-long drying phase, naturally develops a crisp acidity while locking in the coffee's aromatic clarity.
Coffee "C Market" Price - $3.09
Coffee is a globally traded commodity. As such, there is a market for trading coffee futures. This market price fluctuates based on many factors, but especially supply and demand. While, we do not buy many coffees based on the C Market, it does impact how coffee we purchase is priced.
Guilder's Price - $8.10
This is the final price we pay for this coffee. This includes any premiums we might pay to the producer to make sure they are receiving a sustainable margin. It also includes all of the logistics of moving the coffee from its place of origin to our roastery in the Alameda neighborhood of Portland, OR, USA.
